A Quick and Easy Chicken Solution For Busy Moms

On this weeks episode, Aurelia Williams of ParentingMyTeen.com shared her recipe for a super-simple crockpot 'sticky' chicken. I'm trying it out tonight for Shabbos, but I wanted to share my own simple chicken solution.
I just love a spice mix called Montreal Chicken Seasoning. I just rub it all over the chicken (the more the better). Rub it on top and under the skin on the top and bottom. Then I peel an onion and stick it into the cavity. Leave it whole, just be sure to peel it first. As the onion cooks it releases steam which keeps the breast meat moist and tender. If rubbing raw chicken with your hand grosses you out, put on rubber gloves.
Stick it in a preheated oven for 1.5 hours and you've got a very flavorful, moist & tender chicken. I make this just about every Shabbos and we never get bored of it! Sometimes I chop up some potatoes and let them cook under the chicken so I all I have to do is whip up a veg dish and dinner is ready.
